Le Grand Diplôme Professionnel An Overview
Le Grand Diplôme Professionnel will enable you to obtain culinary knowledge, techniques, important certifications and hands-on experience, including a 12-week internship in a professional kitchen and restaurant. Le Grand Diplôme Professionnel has four levels:
Level One: Introduction to Basic Cuisine and Pâtisserie (11 weeks)

Learn various classical methods to prepare and cook vegetables, soups, sauces, grains, eggs, poultry, seafood and meat.

Gain an understanding of food preparation theory, First Aid CPR and training for the Hazard Analysis Critical Control Points (HACCP) certification required in every chef’s kitchen.
Level Two: Developing your Classical Techniques (11 weeks)

Build on the technical skills acquired in level one as you work on more complex recipes and are introduced to the roles and responsibilities of a chef in a kitchen brigade including butchery, charcuteries, garde-manger and more.

Learn restaurant service theory and best industry practices enabling you to acquire skills in food costing, menu development and customer service.

Earn your responsible alcoholic beverage service (Smart Serve) certification.
Level Three: Industry Internship (12 weeks)
Level Four: Perfecting your Skills (5 weeks)

Advance towards a mastery of cuisine and pâtisserie techniques, concentrating on the art of presentation, flavours and plate compositions.

Explore the art of dessert creation, preparation of sugar showpieces, wine and food pairing, desserts throughout history, communications and culinary trends.
Upon graduation, you will be ready to step seamlessly into the finest commercial kitchens.
